A Choice for Health

There are a variety of reasons for becoming a vegan. Most involve animal rights or the environment. My initially reasoning was a bit different but has come to encompass others as well.

My parents were both type II diabetics. My older brother was diagnosed about 2 years ago, and my husband is diabetic. I do not want to join them.

Initially I started out cutting out red meat, then chicken and lastly fish. I am now at the point where I am eliminating eggs and dairy from my diet. I have been dragging my omni husband with me kicking and screaming the whole way, until last thursday.

He had a regular check up and when he got to the doctor's office his fasting blood sugar was nearly 500. He agreed to do it my way and in the days since by eating vegan his fasting sugars have already dropped almost 200 points. Not enough, but a start.

In the month of December I lost 4 pounds without even trying. Again, not enough, but it is a start. I feel better than I have in years. I'm beginning to think that I'm sensitive to the hormones and chemicals they are feeding animal in commercial production.

Maybe not the most pc reasoning but every little bit counts, right?

I hope you will share this journey with me. I imagine that there will be rants, and giggles along the way. Triumphs and failures (be glad there aren't any pictures of my attempts at simmered seitan).
